Oh boy, you guys. I was flipping through my recipe binder trying to decide which one to share with you this week, and I stumbled across this beauty.
This recipe got me through many a deployment night last year. It is so. so. good, and pretty dang easy to make! I’m going to link you to the blog I originally found the recipe on, because in addition to this winner, she has a ton of other delicious vegetarian recipes!
And bonus…she has all of the vegan recipes sorted into their own section, so you don’t have to go searching through the recipes if that’s what you’re looking for!
Prash’s instructions are to fry the battered cauliflower pieces in a pan, which let’s be honest…is probably the most delicious way to go. But I’ve always baked them in the oven, which has worked out very well!
I just tossed the cauliflower pieces in the batter, (which I also added some pepper to), spread them onto a parchment lined baking pan, and popped them into the oven, say around 375-400 degrees F. Just keep an eye on them, and once they start to brown just a bit, give them a stir/flip and pop them back in for a few minutes until they’re lightly browned on both sides, and the cauliflower is tender.
